Lascari’s Italian is a household name to many long-time residents of southern California. For over 40 years they have been serving authentic Italian cuisine based on the family’s favorite recipes. In 2010, Lascari’s decided to expand on its fast casual concept with the acquisition of four new locations under the new name of Lascari’s Italian Cucina. With the acquisition came a second point of sale system (MICROS) and also the formation of a new legal entity. The expansion also added the complexity of handling intercompany food orders from the existing central kitchen where sauces and side dishes are masterfully prepared at a low cost.
To support this growth and increased complexity at the corporate level, Lascari’s selected Restaurant365 in October of 2011 and deployed the Operations module in each of its eight locations. The solution enables managers to see the entire picture of the costs they have control over thereby facilitating store manager accountability. In January of 2013, the company deployed the Accounting module of Restaurant365, replacing Microsoft Dynamics GP. The intercompany features of the Accounting module of Restaurant365 were particularly helpful in simplifying administrative tasks.
Lascari’s began to see benefits within a week of deploying each module. From Restaurant365’s MICROS and Speedline POS-integrations, to the automated creation of General Ledger entries; from the quick and easy cash & coin calculator to the simple sales ticket exception log. Managers complete a simple end-of-day process in just minutes. This information is automatically pushed out to management in the form of nightly flash reports through email.
The software also enables Lascari’s managers to enter vendor invoices for food and supplies they purchase along with the ability to track vendor credits. This is critical for them not only in controlling food costs but it also reduced administrative data entry tasks at the corporate level. Store managers also use the solution to hit weekly labor goals as the POS-integrations sweep all the labor hours and rates each night from the current date back to the date of the last payroll run. This sweep makes accrual entries on the weekly prime cost report that the managers monitor.
